William Fevre is one of the most deeply serious practitioners of this often abused appellation. This Chablis is minerally, chalky and has a lovely concentration. Absolutely sublime with mussels.

The Fevre estate is in the very heart of the Chablis vignoble with soils that include the Kimmeridgian peppered with ancient marine fossils, together with marl and clay-rich lime. The best cuvees are sourced from these famous hectares.
